From the best south-facing single field; La Forêt. The result is an intense and characteristic rosé champagne. The very special deep and more intense color is achieved by allowing the grape skins in "Rosé de Saignée" to have a longer maceration (extraction process), where the must is allowed to absorb more color and aroma from the skins.
