Comes from 18-year-old canes from a northeast-facing field at an altitude of 400 meters. This is a Brunello certified field, and it is exclusively these young canes that are used for Rosso di Montalcino. 18 years is not quite young, but Fabio does not think they are ready yet for Brunello di Montalcino.
The wine has fermented for 19 days in stainless steel with 6 pumpdowns each day.
After the first fermentation, the malolactic fermentation took place in Slavonian oak and the wine was subsequently aged for 12 months in 10 hl Slavonian casks.

La Fornace Rosso di Montalcino has always been a wine with great longevity. We have drunk 20 year old Rdm from there and they are absolutely fresh. This wine is suitable for pasta and white meat, but it can also easily go with stronger dishes of pork and beef.
