Palmina Rosé is the result of a careful and gentle process that ensures a high-quality wine in which all flavor nuances are well preserved and highlighted.

The grapes for Palmina are harvested on average 15 to 20 days earlier than those used for Riecine's red wines.
After a careful selection in the vineyard, the grapes are brought to the sorting table, where they are completely de-stemmed. The grapes are then transferred, without maceration, to gentle pressing.
The must is then poured into cement tanks where it rests for 36 to 48 hours for a brief sedimentation (grape pomace, yeast and other impurities slowly sink to the bottom of the tank) After this the wine is moved to new cement tanks and the cloudy part that has settled is discarded . Here, the must begins its fermentation, without the addition of yeast, first at natural temperature and then, during the full fermentation phase, cooled to 15°C by cooling elements built into the cement tanks. Duration approx. 40 days. Then stabilization, also in cement for a minimum of 4 months before bottling.
