The vineyards Santella, Roncaglia Pian dele Viti, Gremoni are all located on the edge of the forest at an altitude of 200-350 meters. The soil here is well-drained and rich. The microclimate and the biodynamic approach to production are clearly noticeable in this fine wine. Here, structure, rich flavor and fresh acidity are adapted in a really fine balance.
Vinification takes place by gentle pressing, temperature-controlled fermentation in stainless steel tanks. Then storage for 10 months, 50% in steel, 50% in used barriques.
The secondary fermentation takes place in the bottle for 30-40 months, where it develops its characteristic fine perlage and complex aromas.
A really nice presentation of the delicate character of the rosé. Beautiful light pink color in the glass, with sparkling fine bubbles.
The rosé offers a refreshing acidity that awakens the taste buds. Fresh red berries such as strawberries and raspberries jump to the fore and give a lively and fruity sensation. A discreet minerality adds depth and structure to the wine, while the dry character emphasizes elegance and purity.
