When the first frost has set in, the last remaining grapes are harvested, which then become Ninive - a fantastic dessert wine of the eiswein type, or Vino da Uve Stramature (wine of overripe grapes), as they call it in Morgex.

The grapes are 100% Prié Blanc and come from Morgex, and are harvested at an altitude of 900-1,200 metres. It is harvested by hand typically during the first ten days of December, when the night frost reaches between -8 °C and -10 °C. The grapes are pressed and the juice is frozen and transferred to stainless steel tanks. After fermentation, the wine matures further in the steel tanks and is bottled the coming autumn, followed by four months of aging in the bottle.

Nineveh appears with a deep golden color. The wine has an intense aroma of alpine herbs (thyme, juniper), almonds, dried fruit and honey. The taste is dry with exciting hints of candied citrus peel and sweet spices. It is a well-balanced and harmonious mouthful.

This is a very small production of approx. 800-1000 bottles per year.

Ninive is excellent for foie gras, mature cheeses from cow's or goat's milk, as well as cakes.
