The vineyards are located at the Maiolati Spontini in the heart of the Marche region. Here they benefit from a unique location with a mix of sunny days and cool nights that allow the grapes to ripen slowly and develop complex flavor profiles. The soil is calcareous clay.

The production is a careful combination of traditional craftsmanship and modern techniques. The grapes are harvested manually and undergo gentle pressing to preserve the fine aromas. The controlled fermentation and aging on lees ensures a wine with both freshness and complexity. Aging in steel tanks, large barrels and cement for a minimum of 20 months. Then 6 months in bottle.

The color is beautiful and bright straw yellow. The scent is a mixture of citrus fruits, especially lemon and lime stand out. Deeper in the scent, white peaches and sweet pears emerge. A subtle note of floral scents mingles and adds an elegant complexity.

The taste is really elegant. The fresh acidity characteristic of the Verdicchio grape combines beautifully with a mineral depth that creates a harmonious balance. The citrus notes from the fragrance are repeated in the taste and are lightly accompanied by green apples and a discreet nutty note that adds nuances. The aftertaste is remarkably nice, persistently fresh and elegant.

Serve it with tasty pasta dishes or grilled light meat.

This wine is named after an old osteria that served simple country food in this area. The Pievalta 2020 Verdicchio dei Castelli di Jesi Classico Superiore Dominè is a wine that plays with some extended skin maceration. Vintner Alessandro Fenino tried a Gravner-style maceration with underground clay vessels, but the results with the Verdicchio grape showed too much tannin and did not work. Today, he keeps the wines on the skins in a reductive environment, which is a better solution with this variety, he says. These are techniques he learned in Friuli and Slovenia. Seventy-five percent of the fruit comes from the Montecaratto vineyard in the Contrada Busche; this is the part of the wine that sees extended skin contact for one week with submerged cap. The rest of the blend is fruit from other old vines. This is clearly a wine of texture with a very tactile feel that makes it a good food choice, especially with roasted pork or rabbit.
