The Sangiovese grapes are harvested a little earlier and fermentation is carried out in a way that is certainly not so typical of the area.
Attenti al Lupo is 100% sangiovese. Fermentation takes place on whole bunches, combined with semi-carbonated macerations.
The goal is to show the young sangiovese full of energy and life - and with lots of juicy acidity. With this wine, Podere Le Ripi will present a raw and more savory taste that is more difficult to extract with a traditional approach to sangiovese from Montalcino.
Harvested in the first week of September 2021.
50% of the grapes are fermented on whole bunches, with 6 days of carbonation maceration in closed steel tanks. The wine then ages on cement and steel for 18 months.
Lots of fruit in the aroma and taste.
Great minerality and balance to acidity. Lovely aftertaste that lingers well.
Serve it with delicious meat dishes or grilled vegetarian dishes.
