Nice Champagne of 50% Pinot Blanc and 50% Chardonnay. The champagne is crisp and balanced, and a lovely blanc de blancs expression from Les Riceys. The production of the wine is true to the grapes and the soil in the area. An expressive wine that is produced with minimal processing. The wine has an intense fruit character with great complexity and balance as well as a lovely mineral freshness.

The scent is nice and full of tropical fruits and citrus.

The taste is soft and fine with notes of a noble bitterness. Really nicely structured with a long salty and fresh mineral finish.

Serve it with oysters, scallops, ceviche, lobster - all the best from the sea.
