The grapes for this blend come from the farm's two vineyards, Montebello and San Giovanni, which are only 4 km apart. The grapes are manually harvested and then undergo a strict selection process; first as bunches and then, once destemmed, the whole grapes are sorted before being transferred to fermentation in French oak barrels and stainless steel, where the wine undergoes a temperature-controlled fermentation. The wine is aged for 16 months in barriques (70% new).
In Valdisanti you will find a youthful taste of dark fruit and cherry which merges with the special spicy taste of French oak. Valdisanti is a very full-bodied wine and the excellent balance between the intense fruit and fine tannins indicates a cellar-worthy wine.

The 2012 Valdisanti is based on Cabernet Sauvignon, with Sangiovese and Cabernet Franc in supporting roles. This is a beautiful expression with a full and generous disposition. The wine opens to a dark garnet color and thick consistency. You very much taste the Cabernet in this vintage, with dark fruit aromas backed by savory spice and smoke. This wine shows slight tertiary aromas as well that add to the background complexity and texture.

The 2012 Valdisanti is Tolaini's Cabernet Sauvignon-based blend. Raspberry jam, cloves, menthol, new leather, French oak and licorice give the 2012 its dark, powerful personality. The presence of slightly oxidative notes in the aromatics suggest the 2012 won't be a long-term ager, but it is quite attractive today and has enough balance to drink well for at least a handful of years. Tasted two times.
