The grapes are harvested and selected by hand and after careful sorting and selection on the farm, the grapes are fermented separately in small containers to optimize the extraction of the components in the skin.
Fermentation takes 25 to 28 days, after which the wine is transferred to small Slavonian oak casks of 10 hl, where it remains for at least 24 months. The wine is bottled with mild filtration and then refined for at least 12 months in the bottle before release.
Damo is named after "grandfather Damo" who in the 1960s gave birth to the vineyard that has become Montemercurio today.
His passion is still alive and after his death in 2006 the family decided to begin the production of this unique wine, the result of one of the oldest vineyards in the appellation of Vino Nobile di Montepulciano.
